Vegetarian (Fake) Hamburger & Cauliflower Casserole

I love comfort foods – especially casseroles.  But being a vegetarian makes it hard to find really great tasting ones.  My husband was in charge of making dinner one night and we had a head of cauliflower in our refrigerator and fake hamburger (called ‘grounds’) in our freezer. So he did a search in to find a recipe that he could incorporate the two.

The original recipe calls for hamburger (and if you are a meat lover, then by all means put hamburger in this recipe!), but we replace it with grounds.  Grounds is a hamburger substitute – it looks EXACTLY like ground beef, but it’s actually ground up mushrooms (my favorite brand is Quorn Meatless & Soy-free Grounds). It has 110 calories and 2g of fat per serving – and when you sauté it with the onions, it absorbs the flavor and has a great taste! I hope you love it as much as my family does!

Vegetarian (Fake) Hamburger & Cauliflower Casserole

  • 1 12oz package of Quorn Meatless & Soy-free Grounds
  • 1 medium yellow onion diced
  • 3/4 of a 10oz bag of shredded carrots
  • 1 head cauliflower, chopped into bite-sized pieces
  • 1/2lb of asparagus, chopped
  • 1 1/2 C. 2% milk
  • 2 eggs
  • 2/3 C. bread crumbs
  • 2 tsp. Morton Nature’s Seasons (or other seasoning blend)
  • 2/3 C. grated Parmesan cheese


  1. Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish.
  2. Heat a skillet over medium-high heat. Cook and stir grounds until cooked, adding the onions the last few minutes of cooking. Stir in the carrots, cauliflower, and asparagus (I don’t have a pan big enough, so I just sauté my veggies separately). Mix the milk, egg, bread crumbs, and seasoning blend in a small bowl. Stir in the grounds/onions and vegetable mixture, then pour into the prepared baking dish. Cover with aluminum foil.
  3. Bake in the preheated oven for 45 minutes. Uncover and sprinkle with Parmesan cheese and return to the oven. Continue baking for 15 minutes.
