Clean, Gluten-Free Peanut Butter Chocolate Chip Cookies

I think cookies are my favorite dessert.  I’ve recently fell in love with almond flour and use it in all of my baking.  I found this recipe on a blog called Veggie Balance and added some vegan chocolate chips to it.  It’s a thick cookie, but not too sweet.  The honey and vegan chocolate chips definitely rounds it out. So when you have a sweet tooth and are trying to keep your meals clean, try this one!

Clean, Gluten-Free Peanut Butter Chocolate Chip Cookies

INGREDIENTS (makes about 8 cookies)

  • ½ cup creamy peanut butter
  • ⅓ cup almond flour
  • ¼ teaspoon baking soda
  • 3 teaspoons honey
  • ½ teaspoon pure vanilla extract
  • 1 egg white
  • 1 Tablespoon vegan chocolate chips

INSTRUCTIONS

  1. Preheat oven to 350 F
  2. Mix all ingredients together in a medium sized mixing bowl
  3. Form cookie balls with hands about 1 inch each and place on parchment prepared cookie sheet
  4. Flatten each cookie ball with hands to about 2 inches diameter and ¼ inch thick
  5. With a fork, indent the tops of cookies with the crisscross pattern
  6. Bake for 7-9 minutes.
  7. Let cool for 5-10 minutes on cookie sheet before removing
