Almond Joy Protein Bars

I LOVE candy bars!  I LOVE Almond Joys!  But, my body doesn’t.  Eating clean is really hard, but it’s 10 times easier when healthy food tastes good – no – GREAT!

I stumbled upon this recipe on Pinterest from vegan blog My Whole Food Life.  I happened to have most of the ingredients in my pantry so I thought I’d give it a try.

I have never used dates and I have to say, I’m now addicted to them.  They give this homemade protein bar a slightly sweet taste (in addition to the vegan chocolate chips that I used) but not too sweet – the perfect balance!

I tweaked the recipe slightly as I didn’t have chia seeds (and I nixed them because they always get stuck in my teeth, gross!); I didn’t know what hemp hearts where or where to get them (I live in a small town and the closest Whole Foods is 40 minutes away!); and I added one extra Tbsp of vegan chocolate chips (because I thought they didn’t have enough being mini chips).

Keep these bars in the fridge.

Directions

  1. In a food processor, combine the oats, almonds, shredded coconut, flax meal, and sea salt. Pulse for a minute or two.
  2. Then add in the remaining ingredients, except the chocolate chips and water, and mix until a dough starts to form.
  3. Then add water, 1 tablespoon at a time, until the mixture comes together. (I used 4 Tbsp)
  4. Lastly, add the chocolate chips and pulse a couple times until they get mixed in. (I thought it was easier to simply mix them into the dough)
  5. Line an 8×8 baking dish with parchment paper. Leave enough paper to stick out the sides.
  6. Press the mixture into the baking dish. (If you wet your hands, the dough won’t stick to them as badly as they would if they were dry)
  7. Place the baking dish in the fridge to set. It should take an hour.
  8. Once the mixture has set, pull the whole thing out by the sides of the parchment paper. I used a pizza cutter to cut mine into bars.

Make them pretty by garnishing them with some leftover shredded coconut! Enjoy!
